Manado Fufu Skipjack Tuna is a traditional dish from North Sulawesi, made from skipjack tuna (Katsuwonus Pelamis) processed using a special method. The fish is cleaned, split in half, and clamped with a bamboo frame before being smoked (fufu) until fully cooked and dry. The smoking process, known as “fufu” in the Manado language, imparts a distinctive smoky flavor, along with a tender yet firm texture and an appealing reddish color. Fufu skipjack tuna is typically seasoned with salt and sometimes soda powder to extend its shelf life and enhance its flavor, making it free from MSG and preservatives. This dish is usually served with rice and sambal dabu-dabu or further prepared into various dishes such as rica-rica or shredded for use in other meals. Thanks to the smoking process, the fish remains preserved for up to one month at room temperature when stored and handled properly, making it both a traditional food and a popular souvenir from North Sulawesi.
